Today is officially day one on the diet challenge. At Slimming world, Joanne and I both have 10lbs to lose to reach our target weight and we decided that it would be fun to see who will lose 10lbs first.
Personally I need this type of challenge to get me back on track as Easter was so hard to resist temptation………and I did really bad, especially with mum’s cooking.
Last night I made Lamb Korai a Slimming world recipe which was lovely last night. To help with snacking today I’m going to make Houmous dip and buy multi pack of Milky Way stars as they do not have many syns and will give me my daily sugar fix.
Houmous dip
1 red pepper, deseeded and sliced
Fry Light
400g can chickpeas, drained and rinsed
20-50ml water
2 cloves garlic, crushed
1 tbsp lemon juice
salt to taste
1. Place the sliced red pepper on a baking tray sprayed with Fry Light and roast until softened.
2. Once the pepper is cooked and cooled, place all the ingredients in a food processor and blend, adding more water if necessary to create a smooth paste.
3. Add salt to taste and serve with chopped up carrot batons or any of your favourite Free vegetable sticks!
