Lost 3.5lbs…….without exercise

First week of 2014 and I am happy to say I lost 3.5 lbs this week.

I decided to work on my diet first as I knew my eating habits was getting out of control. So I made some lovely low fat meals from Slimming World and tired…..yes tired my hardest not to eat the cakes, biscuits, sweets that was left in the office…….but I failed. If you are like me it feels like they are calling you to eat them especially the M&S Shortbread biscuit LOL.

This week is all about adding fitness and I started today with Bootcamp.  What an awesome session today at Mayesbrook Park with #MindBodyCoaching. It made me feel so alive as it woke up those muscles that have been resting over the past few weeks.

2014 is all about new beginnings and making the right choices.

Below is Spiced Red Lentil Dhal Soup

Serves 4
Takes 30-35 minutes

Ingredients
110g no soak red lentils
low calorie cooking spray
1 large onion, peeled and roughly chopped
1 large garlic clove, peeled and crushed
2cm piece root ginger peeled and crushed
2 tbsp tikka masala curry powder
450g sweet potatotes, peeled and finely diced
450g swede, peeled and finely diced
400g can chopped tomatoes
1.2 litres vegetable stock
salt and freshly ground black pepper
a small handful chopped fresh mint, to serve

Method
Cook the lentils in boiling water for 12-15 minutes, drain and set aside. Meanwhile spray a large saucepan with low calorie cooking spray, add the onion and cook for 3-4 minutes. Add the garlic, ginger, curry powder, sweet potatoes, swede and tomatoes. Stir well, cover and cook over a low heat for 5-6 minutes.

Add the stock and lentils, stir well and simmer for a further 10-12 minutes. Season to taste and serve scattered with chopped mint.
